Freeze-dried jackfruit is produced through the following basic steps:

Step 1: Select raw materials for freeze-dried jackfruit

Selecting the raw material is an important step when producing flavorful, high-quality freeze-dried jackfruit.

Jackfruit received for processing may not fully meet the quality requirements set out in the technical process. Harvested jackfruit may vary in ripeness. Selecting the raw material helps create consistency in the quality, color, flavor, and aroma of the finished freeze-dried jackfruit. This selection process also helps the product achieve the best possible appearance and command a high export price.

Select fruit with similar levels of ripeness for freeze-drying. Do not select unripe jackfruit, because the dried product will taste sour and lack aroma. Overripe jackfruit can become soft and mushy, causing the freeze-dried product to lose its crisp, porous texture. Do not select fruit affected by pests, disease, or damage.

Step 2: Wash the jackfruit and cut the bulbs

After harvest, wash the jackfruit with water to remove dirt, sand, and microorganisms clinging to the peel, helping the dried product meet food hygiene and safety requirements.

Use a knife or specialized tool to split open the jackfruit and remove the peel. Then cut each jackfruit bulb in half and remove the seed. Use a sharp blade to make clean cuts without crushing the fruit. Remove any damaged bulbs during this process so they do not affect product quality. Depending on the production goal, the bulbs can be left whole or cut in half. This choice changes the drying time, so select the most effective preparation method.

Soak the cut jackfruit in a mixture of lemon juice and salt for about 15–20 minutes to remove the sticky latex; then rinse and drain it.

Step 3: Blanch the jackfruit

The blanching step helps inhibit microbial activity.

Blanch the jackfruit in water above 70°C for 3–4 minutes.

Step 4: Adjust the flavor

To enhance the flavor of freeze-dried jackfruit, an appropriate amount of sugar can be added. In addition to giving the crispy dried jackfruit a richer flavor, this method helps extend its shelf life.

Adjust the flavor by soaking the blanched jackfruit in a 3–5% sugar solution, depending on the sweetness of the jackfruit variety, and keeping it in cold storage.

After flavor adjustment, remove the jackfruit and arrange it on trays to drain before drying.

Step 5: Dry the jackfruit in a SUNSAY freeze dryer

During the freeze-dried jackfruit production process, carefully arrange the jackfruit on drying trays and dry it in a SUNSAY freeze dryer. Do not place the jackfruit too thickly on the trays, as this will affect drying time and the rate at which the product dries. Jackfruit freeze-drying has the following three main stages:

  • Stage 1: Freeze the jackfruit at −30°C for 6–8 hours so that all the water in the fruit changes into a solid.
  • Stage 2: Sublimate the ice in the jackfruit. Under vacuum, the ice crystals sublimate without passing through the liquid stage. Approximately 90% of the moisture in the jackfruit is removed.
  • Stage 3: Conduct secondary drying to evaporate the moisture remaining in the jackfruit while gradually increasing the temperature. The raw material reaches approximately 1–4% moisture, and the freeze-dried jackfruit becomes completely dry.

Step 6: Package and label the freeze-dried jackfruit

After drying, sort the freeze-dried jackfruit by size and package it in bags weighing 200–1,000 g, or according to the supplier’s requirements, for market distribution. Export products are often packed in larger units weighing 10–20 kg each. A specialized freeze-dried jackfruit packaging machine can be used for this step.
